Ingredients:
1 1/2 cups flour 1 tsp Baking Powder 1tsp Baking Soda 1 tsp Cinnamon 1/2 tsp ground Nutmeg 1/2 tsp Ginger 1/2 tsp salt 1 cup sugar 1/2 cup oil 2 large eggs 1 tsp Vanilla Extract 1 cup grated Carrots 1 cup grated Zucchini 1/2 cup chopped Walnuts Glaze: 1 cup icing sugar 2-3 tsp milk 1/2 tsp Vanilla Extract |
In a large bowl combine the dry ingredients.
In another bowl combine the wet ingredients. Add dry ingredients to wet ingredients. Fold in the grated Carrots and Zucchini. Add nuts of your choice if desired. Full muffin cups 3/4 full. Bake for 25-30 minutes at 350 degrees. Let muffins cool completely. While muffins are cooling mix the glaze ingredients in a small bowl. Drizzle the glaze over the cooled muffins. |
