A great soft muffin for any occasion.
Ingredients:
Dry: 1 1/2 cups flour 3/4 cup sugar 1 tsp baking powder 1 tsp baking soda 1 tsp Cinnamon 1/2 tsp salt Wet: 2/3 cup oil 1 tsp Vanilla 2 eggs 1 cup grated Carrot 1/2 cup crushed Pineapple 1/2 cup Raisins (optional) |
Steps:
1. Mix dry ingredients in a bowl. 2. Break eggs in a separate bowl and whisk. 3. Grate Carrot and add to eggs. 4 Add remaining wet ingredients. 5. Combine wet and dry ingredients. 6. Scoop into your favourite muffin pans or cake pan. Bake at 375 degrees for 25 min or until toothpick comes out clean. |
