This makes enough for an 8 inch skillet.
Double the recipe for a larger skillet. Filling: 2 cups berries I am using Blackberries, Raspberries and Saskatoon Berries. 1/4 cup Sugar 1/2 tablespoon cornstarch 1/2 tbsp Lemon Juice Topping: 1/2 cup Flour 1 tsp Baking Powder Pinch Salt 1/4 cup butter - melted 1/4 cup Milk 1/2 tsp Vanilla Extract |
Directions:
Preheat oven to 350 degrees. Mix berries in a bowl and add sugar, cornstarch and lemon juice. For topping combine flour, sugar, baking powder and salt. Add the butter, milk and vanilla to dry ingredients. Stir to just combined. Pour berry mixture into skillet and spoon topping onto berries. Bake for 40 min until topping golden brown. Let cool 10-15 min and serve. |
